With the cooler temperatures upon us, I love stick to your bones meals. Here is one of my favorites!
This is my modified version of Shepard’s pie! Even the meat-eating cavemen in my house love this recipe!
1 pound organic or all natural ground turkey or chicken (if you eat red meat that is fine to use as that is the “original” meat of this old recipe)
Brown with the seasoning of your choice, I use homemade pesto with garlic, parsley,onion. Add garlic powder, onion powder, pepper and sea salt to your taste. After browning strain excess liquid and let cool.
Take five medium sized potatoes, peel, boil, drain and mash, I mash mine with parmesan cheese and garlic powder. Let cool.
Rub the bottom of an 8×8 pan with coconut oil to prevent sticking.
Spread the mashed potatoes evenly across the bottom, add a can or bag of organic whole kernel corn, distribute evenly and then top off with the ground meat.
Next take a block of sharp cheddar and shred a heavy portion over the entire top.
Now for my binding secret! Take 3 organic eggs and about 1/4 c organic milk as scramble in a bowl Evenly and gently pour the mixture over the cheese letting it seep through
Cover and bake an hour. Enjoy!
