Vegetarian Indian Quinoa Stir Fry

Grab your quinoa of choice
Boil 2 cups water add 1 cup quinoa and simmer while covered about 10-15 minutes then remove from heat but keep covered

Scramble 2 organic eggs and chop small

Chop any or all of the following:
½ red bell pepper
½ yellow bell pepper
1 inch ginger root with skin
½ onion
2 garlic cloves
2 celery stalks
2 carrots
Handful of bean sprouts
Handful of mushrooms

Get out your Wok or heavy pan
3 tbs sesame oil on low
Add garlic and ginger until fragrant
Then add onion
Then all other veggies and scrambled egg
Stir
Sprinkle all with
1 tsp turmeric
1 tsp curry
½ tsp cayenne
4 Tbs low sodium soy sauce
1/8 C rice wine
Stir

This is where your bland veggies will pick up all the flavor in your dish
Simmer for about 5 minutes and then add DRAINED quinoa
Stir well, taste, add additional curry or cayenne to your liking
Simmer another minute or so
Remove and cover for 5 minutes
Enjoy!
